1 Large, organic, washed, dried and skinned sweet potato
1/2 Tsp. of sea salt
1/2 Tsp. of cinnamon (optional)
2 Tbsp. of organic sugar
2 Tbsp. of extra virgin olive oil
1 Organic dark chocolate bar (or any chocolate bar of your choice)
* You will want to first preheat your oven to 450° F. While your oven is preheating, go ahead and cut your skinned sweet potatoe(s) into super thin slices then you will combine your spices and oil in a mixing bowl. After stirring the spices and oil, add your sliced sweet potatoes and toss to coat. After smothering them in the oil/spice mixture, you will want to then lay the slices out in a single layer (on baking sheets that are lined with aluminum foil). Bake for 10-12 minutes (depending on the oven, you may need to add a few extra minutes to make sure they're lightly brown and crisp), and then take them out of the oven to cool down to a comfortable temperature for you to handle.
*You will then place your chocolate bar in a microwave safe bowl and heat it for (depending on what type of microwave you have) about 1 minute and 30 seconds. Then what I like to do is take a napkin to the sweet potatoes and absorb any excess oil. After that, you'll then take your cooled off chips and dip them individually in the chocolate half way and lay them out on another baking sheet with lined aluminum foil. When finished dipping, cover and place in the refrigerator over night and enjoy the next day!
