14 Slices of vegan bread of choice. cubed
1 Diced red onion
2 Diced celery stalks
4 Minced cloves of garlic
1 1/2 Cups of dried cranberries
3-4 Cups of organic apple juice (depending on preference of dry/moist)
2 Tbsp. of vegan margarine
1/3 Cup of flax seeds
1/2 Tsp. of salt
1/4 Tsp. of fresh ground black pepper
1/4 Tsp. of ginger
1/4 Tsp. of cinnamon
1 Tsp. of thyme
1/2 Tsp. of sage
1 Tbsp. of dried parsley
*In a mixing bowl, you will want to combine the apple juice and the cranberries then set aside.
*Combine your onion, celery, garlic and vegan margarine in a large skillet then sauté until soft (5 minutes). You will then want to add in your salt, pepper, sage, parsley and thyme and sauté for another minute.
*In another mixing bowl, add your cubed bread, celery and onions, flax seeds, cranberries and organic apple juice then stir well. After mixing, pour into a casserole dish. I like to top the stuffing off with some extra flax seeds, but it is optional.
*You will want to pre-heat your oven to 350° F and then bake your dish for 25-30 minutes. After taking it out of the oven and it cools down to a comfortable temperature to eat, you may want to add extra seasoning to taste. Then enjoy!
